    Speaker Bio:

    Irene is a hardworking passionate professional with a proven background in biology, especially in ecology. She obtained her Biology PhD degree at the University of Girona (Spain) working with the use of organic matter and the role of biofilms in stream ecosystems. She spent almost 10 years studying biofilms in these aquatic ecosystems, and collaborated with researchers at Universities in Sweden, Portugal, and Barcelona, working on understanding how biofilms work.

    After working as a limnologist she moved to the food manufacturing sector. She started as a technical APPCC manager and very quickly she became the Quality Manager responsible for a big ready to eat Meal Company of Spain. She spent 3 years working in this organization where she gained valuable experience in food quality issues (ISO 9001, IFS, food analysis, microbiological food problems, safe food procedures, cleaning plans etc).

    Now working for iTram Higiene SL Irene now focuses her attention in the detection and removal of biofilms in the food industry.

    Working as iTram’s R & D Technical Manager Irene now takes the lead in launching new products and solutions to eliminate biofilms and infection in food and beverage manufacturers throughout the world.

    Biofilms, The Hidden World In The Food Industry

    Presentation Synopsis:

    Biofilms represent possibly the greatest single risk factor to food safety.

    Colonies of microorganisms can create a film attaching them to the substrate and protecting against even extreme environmental challenges; desiccation, temperature extremes, salinity and physical abrasion. It protects also against even oxidising biocides.

    Mature biofilms often include pathogens, and as they periodically release some of the colony to exploit new resources and extend colonisation, this creates a real and continuing threat to product integrity, shelf life, and health.

    Eradicating existing biofilms is difficult, and even enzyme treatments, often regarded as the preferred approach, can require several treatments. Given this difficulty and the potential impact on production, the logical strategy is prevention. Designing cleaning and disinfection programs that include regular checking to expose early biofilm formation, makes it possible to treat these quickly and effectively before they become established.
